Ingredients:
2 cups parsnips, chopped fine in the food processor
1 cup pineapple, diced
1 cup carrots, chopped fine
1 cup cucumber, diced
1/2 cup scallions (spring onion), sliced
1/2 cup currants
1/2 cup cashews
2 tsp yellow curry powder
Himalayan salt and pepper to taste
1 cup mâche (or substitute with baby spinach or rocket)

Method:
Stir all ingredients together and serve on a bed of mâche. (You can substitute butternut for parsnips if you can't find any.)


Mache Dressing
1 cup mâche
2 Tbs water
2 Tbs olive oil
Himalayan salt and pepper to taste

Method:
Place all ingredients in blender, blend until smooth.
